- 2 lbs Chickencut into serving pcs.
- 2 tbsp Soy Sauce
- 2 tbsp Vinegar
- 4 cloves Garlicminced

- 1 Red Bell Peppersliced
- 1 Green Bell Peppersliced

Chicken Caldereta or Kalderetang Manok is a flavorful Filipino stew made with chicken pieces simmered in a tomato-based sauce with vegetables such as bell peppers, carrots, and potatoes. It’s a popular dish in the Philippines, especially during special occasions and gatherings. The dish is known for its rich, hearty flavor and vibrant color.
Traditionally, Chicken Caldereta is made with chicken thighs or drumsticks, but you can also use a whole chicken cut into pieces. The sauce is made with tomato sauce or tomato paste, liver spread, and soy sauce, giving it a savory and tangy taste. The dish is typically served with steamed rice.
Cooking time for the Kalderetang Manok can vary depending on the size of the chicken pieces and how long you let the sauce simmer. Generally, it takes around 1 to 1.5 hours to cook the chicken until it’s tender and the sauce has thickened.
Steps
1 Done | In a bowl, mix the soy sauce, vinegar, and garlic. Add the chicken and marinate for at least an hour. |
2 Done | In a large pot or Dutch oven, heat the oil over medium-high heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside. |
3 Done | In the same pot, add the onions and cook until translucent. Add the tomato paste and cook for another 2-3 minutes. |
4 Done | Add the canned tomato sauce, chicken broth, potatoes, carrots, and bell peppers. Bring to a boil, then reduce the heat and let simmer for 10-15 minutes, or until the vegetables are tender. |
5 Done | Add the olives and cooked chicken to the pot. Season with salt, pepper, and chili flakes (if using). Let simmer for another 10-15 minutes, or until the chicken is fully cooked and the sauce has thickened. |
6 Done | Serve hot with steamed rice. |
